Yum. This mousse is absolutely delightful – you would have no idea that it isn’t full of all things bad for you, and that in fact, it contains avocado – which is a delicious food high in all the right fats. The avocado gives the mousse a rich, creamy texture and the addition of chocolate means the taste is in no way compromised. It is also super easy to make – just chuck it in the blender and you are good to go! Unlike regular mousse however, I wouldn’t recommend it three days later; it loses its appeal a bit once the avocado starts browning and the taste starts coming through.
Collect
- 55 g dark chocolate
- 1 ripe avocado
- 4 T coconut milk
- 4 t maple syrup
- 1/2 t vanilla
- pinch salt
- 1/2 t chilli (optional)
- grated chocolate and coconut to garnish
Create
- Melt the chocolate over heat (it is possible to use the microwave, but just be careful that it doesn’t burn).
- Blend the avocado. Add the coconut milk, maple syrup, vanilla extract and salt.
- Add chocolate last.
- Put into glasses, garnish and then refrigerate until serving.
