As holidays loom, it’s definitely clever to start thinking about some healthy alternatives to the traditional indulgent desserts that we so commonly see decorating the table. This brownie is light, quenching, and tasty. The main problem I have with this brownie is that it is quite crumbly; it can only marginally be eaten with your hands. I would recommend serving it in a bowl with a spoon and even some yoghurt (although it’s not dry at all, so doesn’t really need it).
Collect
- 1 large zucchini
- 1 c peanut butter
- 1 egg
- 1/4 c cocoa
- 1/4 c honey/maple syrup
- 1 t cinnamon
- 1 t baking powder
- 100 g dark chocolate
Create
- Preheat the oven to 180°C.
- Put all the ingredients into a bowl, adding the grated zucchini last.
- Bake for approximately 35 minutes.
- Cool in the tin and then cut.
